quick pasta

pasta

I made this pasta quickly when we discovered we hadn't made enough leftovers from dinner. I don't remember what we put in it aside from Italian seasoning and cayenne pepper. It was good but I forgot to bring cheese T_T

shrimp scampi

shrimp scampi

This is the bento I assembled from the shrimp scampi dinner I cooked. Chocolate Silk is in the drink container, and the second L&L contains dried apricots and mango, and in the middle is trail mix with raisins, nuts, chocolate and peanut butter chips.

Shrimp Scampi )
Alterations:
- Added double the amount of red chili flakes
- Used linguine instead of angel hair
- Omitted dry white wine (no replacement)
- Minced and peeled garlic

Notes:
Next time I won't be so liberal with the parsley.

stovetop mac n cheese

stovetop mac n cheese

I actually cooked this a while ago, but I don't remember when, so I'll just post it as today. Neither of us really liked this one. It turned out too rich for us to eat much of it, so I don't think I'll make it again. We had to substitute a few ingredients because of our lactose intolerance and adverse reactions to eggs, so those substitutions may have changed the flavor.

Stovetop Mac-n-Cheese )
Alterations:
- Egg substitute
- More cheese
- Plain soy milk (reduced over medium heat) for the evaporated milk

chicken pesto orzo

chicken pesto orzo

This was a dish I had while working an event for my company in the city. We were served this by hotel catering, except without the chicken. The recipe is so easy that I just figured it out when I ate it.

Just throw together cooked orzo pasta, cooked chicken (I steamed mine tonight because it was frozen and would have otherwise taken forever), sun-dried tomatoes, and pine nuts (I was without pine nuts this time, boo).

broiled halibut

broiled halibut

I decided to try cooking fish at least once a week. It's expensive, but mostly healthy. This time the fish was a little overcooked. I'm not used to making fish, so I have to figure out how to tell when it's done. Or I'll just go by temperatures.

Heavenly Halibut )

Notes:
- 1lb of halibut, kept other ingredients the same
- Taco Bell Hot Sauce

quick dinner

quick shrimp pasta

Didn't feel like cooking tonight, but my bf helped so it wasn't too bad. We just threw together some pasta, shrimp, butter and basil. I used the garlic butter to make some bread with Parmesan cheese on it. Yum!

slow cooker minestrone

slow cooker minestrone

The weather was stormy -- perfect soup weather. I overcooked the noodles so they were a little mushy, but it was still tasty. Some of the carrots and most of the onions weren't soft enough after the 8 hours, so next time I will probably cook it longer and add the noodles later. I liked the onions with a little crunch, but I like my carrots really soft. Also, I normally detest celery, but I didn't use as much as directed, and they were soft, so I didn't mind them as much.

This is actually in a Lock & Lock but you can't tell cause it's such a tight shot. I don't like the pink spot on the chicken, but it was totally cooked; I took its temperature. I used garlic butter from Whole Foods to flavor both the pasta (mostly stuck to the pan) and the garlic bread.

food for the day

Breakfast
Chocolate Silk, green grapes, strawberries, peach yogurt, a banana, a bear claw

Lunch
Homemade chimichanga with Taco Bell hot sauce

Dinner
Italian style slow cooker chicken, recipe below, over pasta

Italian Style Slow Cooker Chicken )

Notes:
I ended up doubling this recipe because it was too small for my 6-quart pot. I thought it would be fine since the recipe said it is for a 3.5 to 5 quarter cooker, but even after doubling the recipe, it was still barely half full.

The chicken was a little dry. I'm not an experienced slow cooker cooker by any means, but I think that was due to the length of time it was cooking (8+ hours). Since my week day slow cooker meals will always be cooked this long, I doubt I will cook chicken in the slow cooker very often.

We didn't have enough leftover for lunch tomorrow, so we're bringing chimichangas instead.

quick pasta

garlic & herb linguini

This pasta was freshly made from a farmer's market vendor. I quickly boiled it this morning, tossed in some butter, garlic and cheese.

I forgot my spork x_x

Okay, I'm cheating. This is actually a picture taken today (August 21) during my lunch break, but I'm posting it for Sunday, August 19 because that is when I cooked this -- I just didn't take a picture.

Anyway, click here for the tomato sauce recipe.

locknlocked pasta

Pasta with leftover sauce in my new round lock and lock. Took this pic at work when I remembered I hadn't already taken a pic. And I have to say, there's nothing like freshly grated parmesan.

I was trying to follow a recipe, but I discovered many of my ingredients had spoiled. It turned out pretty good, though ^_^
