I have been sick since Saturday and haven't been up for cooking. I still shouldn't really be in the kitchen but I wanted to cook for my guy.

This is from a recipe at posie's place.

Alterations:
- Homemade garlic & herb cream cheese, below
- Homemade fajita seasoning mix, below
- Whole chicken instead of just the breasts
- More cheddar

I figured out why the recipe was so spicy last time -- I used 2 whole jalapeños instead of just 2 tablespoons. Whoops! I used less this time and although it didn't hurt as much, it just wasn't spicy enough.

Crab Cakes


This is the mixing stage of the crab cakes I'm going to cook tonight. It's a different recipe than the one I tried last time -- this one is meant to be baked. We're going to a party this afternoon so I made them this morning and put them in the fridge until tonight. I forgot to take a picture of the shaped patties, but I'll post a finished picture and the recipe later.

been a while

chicken tortilla


This is a pic of tomorrow's lunch while I'm at work, but I had it for lunch today as well. It's been a while since I've actually cooked rather than making a leftover bento. I have to say, I miss it a lot. And after having put so much time and effort into sewing my apron, I had a good time putting it to good use.

Any case, I'm using store-bought tortilla chips today because deep-frying takes so much time and I have a ton of homework to do. It's too bad, though, because home-fried tortilla strips are so much better than the store bought stuff.

The quickie version of my chicken tortilla soup. Quickie meaning we used store-bought tortilla chips and pre-roasted Safeway chicken.

Still good though. And much to my relief, it doesn't seem to be disagreeing with my already upset stomach. Second week of the new job; can't call in sick now!

Nachos


I just had this, but it was so delicious I had to cook some more.

You can seed the jalapeños before you add them, but I like to seed them into the salsa. ~_^ To make the nachos, I just put cheese and taco seasoned meat on chips and microwave (I would toaster oven, but mine is broken), then when it's done I top it all with salsa. It's better if you drain the salsa a little before putting it on the nachos because they will get soggy.
