I've been eating nachos from leftover taco meat for a while. Tomorrow is my one week cutoff day for leftovers, so I might as well toss the rest of it tonight. And the guac too, cause it's not that good. I bought really good guac for game day, though I didn't take pictures of it since it was store-bought. So now I have to figure out which brand it was. Doh.

Plus cake and ice cream, because I had a rough day


The following conversation I had with my bf and our friend cheered me up considerably.

me: Are you guys gonna have any more tacos? I can open the other box of shells.
RV: I don't think I'm gonna have another one...
bf: Oh, and there's dessert!
RV: Dessert? What dessert?
me: Cake
bf: You remember that cake I brought in [to work] that was almost like a brownie?
RV: You mean the anchovylove-is-amazing cake?

This was the last of my taco seasoning and I couldn't make more because I'm out of chili powder. I posted the cake recipe a couple days ago.

My bf cooked tacos for us tonight ^_^

My sister gave me this recipe for skillet lasagna -- it's cooked on the stovetop in one pan -- that's really tasty. I think a coworker gave it to her, so I have to ask if it's okay to post online before I do so.

It's really easy and it allowed me to use the new hand blender I bought today. For once, it was the same price at Bed, Bath and Beyond, so I bought local and saved myself a wait.

My bf and I both packed some for bento tomorrow.

Alterations:
Omitted pork, used 1 lb ground beef instead
Used mozzarella cheese instead of ricotta

My bf has night class on Mondays and Wednesdays, and he has dinner with his dad, so I'm on my own for dinner. This was taken in front of the tube, with the remotes. I know, I'm bad ^_^

No recipe; I just winged it. Garlic and jalapeños in the ground beef, salsa as a topping.

Quick lunch. I can't believe my boyfriend and I filled and ate all 12 taco shells.

My boyfriend happened to come home just as I finished taking the photos. What impeccable timing!

This was a quick dinner I threw together at the last minute. That's why it's not very attractive T_T

Anyway, we have a makeshift burger with McCormick Spicy Steak Seasoning (this stuff makes everything good) and garlic, and Portobello Mushroom Fries by Rachael Ray at The Food Network.

I didn't exactly follow the recipe since I was in a hurry and two mushrooms short of the recipe. Plus, I baked them in the oven instead of grilling them. Oh well, it was still good. My boyfriend said they were pretty good, for mushrooms (he doesn't like mushrooms). Next time I will follow the recipe more closely; I'm sure they'll turn out great ^_^

I just had this, but it was so delicious I had to cook some more.

You can seed the jalapeños before you add them, but I like to seed them into the salsa. ~_^ To make the nachos, I just put cheese and taco seasoned meat on chips and microwave (I would toaster oven, but mine is broken), then when it's done I top it all with salsa. It's better if you drain the salsa a little before putting it on the nachos because they will get soggy.

My salsa was very spicy, so if you don't like it as hot, you can use a less spicy pepper, or use less jalapeño. Also, a lot of people like to add cilantro, but I decided to try it without this time.
