This recipe is actually for macaroni and cheese with chicken meatballs, but I didn't want to make the mac n cheese. The meatballs were really good, and I don't even like meatballs that much ~_^

The mini-pita pocket idea isn't mine. I saw it online somewhere, but I can't remember whose site it was. My apologies to the creator, and if you see this, let me know it was you so I can post credit to you.

My mom made this for dinner so I took some home. She and my dad have moved back to town. Yay! ^_^


The water bottle I normally use has started to leak, so I ended up buying a Sigg bottle. I don't really like the mouth piece, though. I usually like wide mouth water bottles and this one just has one of those sports spigot things. Maybe I'll get used to it. The bottle was expensive, so I'm gonna keep using it for a while before I decide I don't like it. new sigg bottle

These buffalo chicken tenders are baked, not fried, and though they are not golden brown, they certainly were good. I even added more cayenne pepper, but that didn't even do the trick. Anyway, I ended up making katsu sauce along with the cilantro dip, so that made it spicy enough.

The fries were frozen from Whole Foods. They had some kind of seasoning on them, but I don't remember what it was. Garlic and rosemary? Something like that.

I have been sick since Saturday and haven't been up for cooking. I still shouldn't really be in the kitchen but I wanted to cook for my guy.

Alterations:
- Homemade garlic & herb cream cheese, below

- Whole chicken instead of just the breasts
- More cheddar

This was a dish I had while working an event for my company in the city. We were served this by hotel catering, except without the chicken. The recipe is so easy that I just figured it out when I ate it.

Just throw together cooked orzo pasta, cooked chicken (I steamed mine tonight because it was frozen and would have otherwise taken forever), sun-dried tomatoes, and pine nuts (I was without pine nuts this time, boo).

I winged it on this dish. My parents used to make something like this all the time when I was a kid. Whole chicken is cheaper than the boneless, skinless stuff I usually buy.

I steamed this for about 30 minutes, then I stood it up on a root beer bottle in a glass baking dish and put it in the oven for about another 30 minutes. Every few minutes I would brush on a mixture of lemon juice, soy sauce and a little Worchestershire sauce.

While my bf cooked the potatoes, I nuked some corn with a bit of butter.

This is actually in a Lock & Lock but you can't tell cause it's such a tight shot. I don't like the pink spot on the chicken, but it was totally cooked; I took its temperature. I used garlic butter from Whole Foods to flavor both the pasta (mostly stuck to the pan) and the garlic bread.

Ah, finally back from the big company event this week -- and back in the kitchen.

This is the first time I've made chicken adobo since I botched up my first attempt a few years ago. I used boneless, skinless thigh meat instead of a disassembled whole chicken like my mom does. The absence of chicken bone makes it easier to eat, but it might have an effect on the flavor too.

I can't post the recipe since it's one of my mom's, but a Google search for adobo recipe yields many similar recipes.

Notes:
I ended up doubling this recipe because it was too small for my 6-quart pot. I thought it would be fine since the recipe said it is for a 3.5 to 5 quarter cooker, but even after doubling the recipe, it was still barely half full.

The chicken was a little dry. I'm not an experienced slow cooker cooker by any means, but I think that was due to the length of time it was cooking (8+ hours). Since my week day slow cooker meals will always be cooked this long, I doubt I will cook chicken in the slow cooker very often.
