tinola

Tinola

This is a Filipino dish, tinola, that my brother's girlfriend cooked for us tonight. So good! I hope that's enough rice for me.

Ingredients:
1/2 lb chicken, with skin
1 medium-size ginger, peeled and chopped
2 Choyote (squash), peeled and sliced into wedges
1 yellow onion, sliced
Patis (fish sauce), to taste

Directions:
1. Boil the chicken, until cooked through.

2. Add ginger and onion. Boil until the onion is translucent.

3. Add patis, followed by the choyote. Let boil until the choyote is cooked.

Alterations:
If you want to use skinless chicken, the broth will be less flavorful, so you can use chicken broth instead of or in additional to water.

I loff tinola! But I always end up smothering it with patis (fish sauce) because I like it really salty - so bad for me, I know!
